Summer break is here for my kiddos and so they are always snacking. I wish I could say I’m that perfect parent that gives them only the healthiest options but I’m far from perfect and so I often slack in that department. But here is a great recipe for these yummy energy bites my kids and even the adult family members love.
Quick and Easy Energy Bites
- 1 cup Rolled Oats
- 1/2 cup Chocolate Chips
- 1/2 cup Crunchy Peanut Butter
- 1/2 cup Ground Flax Seed or Flax Seed Meal
- 1/3 cup Honey
- 1 tsp Vanilla Extract
- 1/3 cup Toasted Coconut (optional)
Mix all ingredients is a medium bowl. Form into 1 inch balls and set on a tray lined with parchment or foil. Refrigerate for an hour and enjoy
