Hi Ya’ll I haven’t written in a while because you know life happens.  Some unfortunate things have come our way but we will come out stronger.  Just wanted  to wish everyone a Happy National Homemade Cookies Day and share my hubbies yum recipe for Chocolate Oatmeal Coconut cookies.

Chocolate Oatmeal Coconut Cookies

Ingredients

  • 1/2 cup Butter, softened
  • 1/2 cup Creamy peanut butter
  • 1 1/4 cup Granulated sugar
  • 1 Egg
  • 1/4 cup Water
  • 1 tsp Vanilla
  • 1 1/2 cup All purpose flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Old fashioned oats
  • 1 cup Chopped pecans or your favorite
  • 1 cup Shredded coconut
  • 1 1/2 cup Bittersweet chocolate chips

Instructions

  1. Preheat oven to 375. First you are going to cream the butter and peanut butter then add the sugar and mix or 5-6 minutes.


  2. Now add the egg, water, vanilla and cream until well combined.


  3. Next stir in flour, baking soda and salt then mix in oats, chopped nuts and coconut. Slowly fold in chocolate chips

  4. We like to use about a tablespoon and a half of of mix about 2 inches apart on ungreased cookie sheet.

  5. Bake for 10-12 minutes. Let cool for 5 minutes and enjoy the goodness.

These are truly my favorite cookies ever. Hope you all love them as much as I do
