Today is National Cheesecake Day. I love some cheesecake for dessert. I also love anything chocolate so I thought lets make a chocolate cheesecake. Believe it or not a few years ago I wouldn’t even try cheesecake because unfortunately I was very picky. I missed out on a lot of yummy desserts.
Below is a Chocolate Ricotta Cheesecake and you can make your own whipped cream. I like mixing heavy cream with some powdered sugar and either coconut or almond extract in a stand mixer until you reach your desired consistency.
Chocolate Ricotta Cheesecake
- 3 cups Ricotta Cheese
- 1 cup Sugar
- 4 Eggs
- 1 cup Whipping Cream
- 1/4 tsp Salt
- 1/3 cup Unsweetened Cocoa Powder
- 1/4 cup All Purpose Flour
- 1 tsp Vanilla
Graham Cracker Crust
- 1 cup Graham Cracker Crumbs
- 2 tbsp Sugar
- 1/4 cup Melted Butter
- Butter Spray for Springform Pan
Graham Cracker Crust-------
Preheat oven to 350 degrees. Prepare crust by combining the cracker crumbs, butter and sugar. Then press this mixture on the bottom and 1/2 ich up the sides of a 9 inch springform pan. Next bake for 10 minutes and set aside to cool.
In a food processor or blender, place ricotta, sugar and eggs and process until smooth. Add remaining ingredients and process until smooth. Pour batter into prepared cooled crust and bake for 1 hour and 15 minutes or until set. Remove from oven and let sit aside until completely cooled. For best results getting cheesecake out of the pan spray with butter spray before pouring the batter in.
